In these days of ready meals and convenience foods galore, humbler alternatives are often overlooked but in our house, we've always kept a ready store of dry, canned and jar foods. Canned tuna, anchovies, capers, canned tomato or passata and olives are a little Mediterranean combo of vital ingredients that is never missing in our store cupboard. We're a little less used to sardines and mackerel but realise that we should be eating a lot more of these too - but the great thing about canned fish is how quickly you can rustle up something.
