Don't wait for delivery - get in the kitchen and prepare your own fast food!
Canned fish is sometimes seen as only fit for sandwiches or perhaps with a salad but there are simple ways to make this easily stored item into a cheaper and healthier alternative to your favourite fast food.
Pizza – A baguette sliced in half is an ideal quick base (you can get those frozen ones you cook yourself so you have them ready whenever you need them), spread with passata or drained tinned tomatoes and dried herbs, add grated cheese, (There must be some at the back of the fridge!) and then your favourite sustainable and ethical Fish4Ever fish – delicious chunks of Yellowfin tuna, plump and juicy anchovies, tasty sardines (these are a “love it or hate it” fish we find!) or even go mad with mackerel! Pop in the oven or under a grill for a couple of minutes and you have a really delicious and healthier alternative to Dominos!!
Burger and chips – Ok this is a bit harder to replicate but a fishcake in a bun with salad is a close and delicious alternative, serve with potato or butternut squash wedges on the side. The fishcake is easy to make – see recipe below – you can alter the type of tinned fish to suit (Fish4Ever tuna, mackerel, sardines and anchovies will all work) and go with or without the chilli to spice it up. To make the wedges it is really simple just slice the potatoes into wedge shapes and coat with oil – pop in the oven for 20 minutes. (For the butternut squash you need to peel it and it takes a bit longer but taste brilliant for very few calories!!) If you put the wedges in while you prepare the fishcakes then this meal most likely takes no longer to prepare and cook than getting to the McDonalds and ordering your food! (Around 30 minutes!) Tip: To speed it up use frozen chips and defrosted frozen mashed potato to make the fishcakes and you could be eating in 15-20 minutes!
Fish Cakes (for four) 1 tin of either Fish4Ever Sardines or tuna or mackerelA handful of coriander1 Red chilli (to taste)4 Spring onions Potatoes 4 (baking size/large)Milk (2 generous splashes)Butter (to taste) Breadcrumbs or polenta to cover four large fish cakesOlive oil (2tbsp)Peel and boil potatoes and when cooked mash with some milk & butter, leave to cool.Finely chop coriander, chilli (including seeds) & spring onion, set aside.Empty sardines into a bowl and mash, combine all ingredients except breadcrumbs together and shape into to four round patties, brush with a little beaten egg and roll in the breadcrumbs. Heat two tablespoonfuls of olive oil in a shallow frying pan and fry cakes on either side until golden & crispy
Fried “chicken” or Fish and Chips – Coat Fish4Ever mackerel fillets in oil in spiced or plain polenta, breadcrumbs or batter (1egg mixed with a little flour to a paste, add milk until it is a thick custardy consistency). To spice up the use a little chilli, salt, pepper and any other you like – I like curry powders such as garam masala. Fry the fish to crisp the coating and warm through, serve with potato wedges (as above) and some beans or sweetcorn (tinned and frozen are easy to have around).
