White tuna is much appreciated in the US or the Caribbean as albacore and in Northern Spain where it is called "Bonito del Norte". It is a dense 'meat-like' tuna. We only pack high quality fillets - not chunks or pieces. White tuna pairs very well with certain flavours. It's delicious with bacon: try them together in salads or with broad beans. Alternatively use stuffed in red peppers with cream cheese, or with lemon juice and capers.

Fished off the coast of Namibia which has been praised as strong in terms of sustainable management generally by FAO, protects local fleets and polices waters well. South Atlantic white tuna stock are in a better state than North Atlantic and similar to MSC-certified North Pacific. Avoiding the high by-catch of long-line fishing, we use one named boat, the South Tern, a large modern pole-and-line boat off the coast of Namibia.
